If you mean make a grid area that is not rectangular then you can use the cutout colour to erase the parts of the grid you do not want. This is the top left colour in the palette.
To make a circular grid, first draw a circle of crosses using the circle shape tool on the toolbar. Then select the cutout colour, choose the floodfill tool and click outside the circle. When the canvas is viewed in grid mode, it will only show grid inside the circle.
You can delete the colour used to create the circle or just paint over the stitches in background colour.
You may find it easier to follow a chart if you keep it rectangular though and simply have blank grid areas. This ensures that grid lines are present for counting right up to the grid numbers
